The majority of draught beer today is served by pushing the beer with gas pressure from the keg in the cooler up to the tap tower and into the glass. However, long before refrigeration and modern day tap systems were created, the English matured and served beer in small casks called “Firkins.” Because the beer was allowed to condition naturally in the Firkin, it came out tasting rich, flavorful and incredibly smooth.

Once a month we celebrate beer history with a traditional Firkin Keg Tapping at each of our brewery restaurants. The kegs are tapped in the traditional way, with one of our brewers driving a spigot through the front of the keg with a wooden mallet. This often results in a spray of beer and sometimes the complete soaking of the brewer tapping the keg.

We choose a different beer from our list of favorites so be sure to join us each month to sample these unique and limited brews.
